Picnic friendly recipes

Picnic is an excellent opportunity to get creative with cooking and discover new meals from others. Children love tasting all kinds of foods and putting their fingers into everything. Make picnics your family tradition and let friends and other families join. Our favourite picnic spots are the beaches of Vancouver British Columbia and the Dalmatian coast in Croatia. Perhaps it’s something about the sun and the sea but the food on the beach, after a long swim, tastes better.

During the Coronavirus times, it is also safer to meet friends outside. Choose food that is easy to share and can be wrapped individually. Here are two tips from us, one sweet and one salty.

Cake with berries and crumbs

The batter:

  • 3 cups of flour
  • 1 cup of sugar
  • 1 baking powder
  • 1 cup of milk
  • 1 cup of oil
  • 3 eggs
  • (for healthier version, use whole wheat flour and brown sugar)

Mix flour, sugar, and baking powder together. Add milk, oil, and three yolks. Whisk the egg whites and add them too. Mix until the batter is smooth. Grease and flour the pan before pouring the batter, or use baking paper.

Crumb topping:

  • 2 spoons of butter
  • 1 spoon of sugar
  • 2 spoons of flour

Put the three ingredients into a bowl and mix with hands until you create crumbs.

Once you’ve got the batter in the baking pan, add berries and the crumbs on top.

Bake 30 min on 170°C.

Cauliflower cakes

Cauliflower cakes are delicious and easy to make and share. Just mix mashed cooked cauliflower, bread crumbs, an egg and salt, then fry on oil.
